Emeril's Crockpot Chicken Gumbo

2 lbs. boneless chicken cut into small pieces
1 lb. smoked sausage - Hillshire
1 1/2 cup diced yellow onion
3/4 cup celery
3/4 cup green pepper
1 Tbs. minced garlic
2 bay leaves
1/2 tsp. dried thyme
1 tsp. hot sauce
3/4 tsp salt
1/2 tsp pepper
1/2 tsp Worcestershire sauce
1/8 tsp cayenne pepper
1 qt chicken broth
1/2 cup flour
1/4 cup chopped fresh parsley
Rice for serving

Combine everything except flour, parsley and rice in a crock pot. Cook for 6-8 hours. Then, in a small pan, cook flour over med-high heat until light tan, it will have a nutty smell. Combine 1 1/2 cups of liquid from crock pot with flour. Whisk until smooth and add mixture to crock pot. Add parsley. Let simmer 1 1/2 hours. Serve in a bowl over a scoop of rice.
