Mexican Rice

1 Tbsp. canola oil
1 Tbsp. butter
¼ cup onion, chopped
3-4 cloves garlic, minced
1 ½ cup long grain rice
3 cup chicken broth
1 tomato, chopped
1 tsp. salt

Heat butter and oil over medium high heat and saute onion and garlic.  Add rest of ingredients, bring to a boil and let simmer until rice is tender.
