½ loaf French bread
1 clove garlic
2 Tbsp. olive oil
2 tomatoes, medium chopped
2 avocados, medium chopped
1/3 c. finely chopped onion
¼ c. chopped cilantro
2 Tbsp. freshly squeezed lime juice
½ tsp. salt
¼ tsp. pepper
Preheat the oven to 400ºF. Slice the French bread on the diagonal into ½" rounds and place on a baking sheet. Toast the sliced bread in the oven for 3 minutes, then flip each piece over and toast an additional 3 minutes. Remove the toasted bread from the oven and immediately rub with the clove of garlic (it works best to first cut a small tip off the garlic clove so that the oils will seep out). Brush the tops of the garlic-rubbed toasts with olive oil and set aside.
In a large bowl, combine the chopped tomatoes, avocado, onion, cilantro, lime juice, salt and pepper. Mix together gently making sure the avocado is well coated in the lime juice. Spoon a portion of the mixture onto each of the garlic toasts and serve. Yields 12-15 servings.

Zucchini Boats

1. Cut small zucchini squashes in half lengthwise. Scoop out seeds with a spoon.
2. Combine some olive oil, garlic, and salt together in a bowl. Brush onto the zucchini.
3. Place halved grape tomatoes in the groove of the zucchini and bake at 350 for 30 minutes.
4. Cover the boats with shredded mozzarella and Parmesan cheese. Broil for 3-4 minutes, until cheese is melted.

Fruit Dip

1/2 c. whipping cream
2 tsp. sugar
1/2 c. yogurt
1/2 c. sour cream
Whip whipping cream, sweetening with the sugar. Add all other ingredients and blend together. Serve with any fruit. Ideas: apple, banana, grapes, strawberries, etc.

Parmesan Baked Potato Halves

6 small potatoes, scrubbed and cut in half
1/4 c. butter
Grated parmesan cheese
Garlic powder
Other seasonings (to personal preference)
Preheat oven to 400 degrees F. Melt butter and pour into a 9x13 inch pan and spread evenly across the bottom. Generously sprinkle parmesan cheese and lightly sprinkle other seasonings all over the butter. Place potato halves face down on the butter and seasonings. Place in preheated oven and bake for 40 to 45 minutes. Cool for 5 minutes before removing from pan. Serve on a plate with a side of sour cream for dipping.
